Chef Nawal Alkhalawi Crafts Saudi-Japanese Fusion Menu for ROKA Riyadh

Japanese restaurant ROKA Riyadh has announced a special two-night collaboration with acclaimed Saudi chef Nawal Alkhalwi in celebration of Saudi National Day. This exclusive signature menu, available only on September 26th and the 27th, offers diners a unique fusion of Saudi and Japanese cuisines.
Priced at SAR 380, the set menu available only for dinner kicks off with a selection of innovative starters, including the standout nigiri ‘aburi’, where traditional Japanese sushi is elevated with Saudi-inspired toppings, reflecting the rich culinary heritage of both cultures. Another highlight is the pickled date and spinach salad, which features sumac-coated almonds, fried goat's cheese and premium Saudi dates.
For the main course, guests can savour a Japanese barley jareesh hot pot infused with black lime, alongside za’atar-roasted cauliflower served with spicy tahini sauce and crispy cauliflower leaf chips, blending Saudi flavours with Japanese techniques.
The experience concludes with an indulgent array of desserts, including a Saudi sticky date pudding, cardamom-infused camel milk gelato, and a miso crème brûlée with pistachio ice cream. Le Cordon Bleu-trained Chef Nawal Alkhalwi, renowned for her dedication to reviving Saudi heritage through food, will be present on both evenings to engage with guests and provide insights into the thoughtfully curated menu.
