AlRahmany Is the Old Cairo Shop Serving Sobia for Over a Century

A creamy classic, a sweet staple, a shot of liquid lucidity in the often overwhelming revelry of Ramadan. Yes, it is officially Sobia Season in Egypt, as fasters submit to the spell of a seemingly simple concoction of coconut milk and rice.



As with so much of Egypt’s culinary heritage, there’s a history behind Sobia, a history that can be traced back to Sobia ElRahmany, a veritable landmark in Al Sayeda Zeinab that has been serving their secret Sobia recipe to the masses since 1920. This holy month, we’re bringing back our ‘A Story from Every Corner’ series but with a little Ramadan twist, as we speak to Mahmoud Sobhy, the man holding the fort at Sobia AlRahmany, to learn more about why no one (and we mean no one) does Sobia like Sobia ElRahmany has been for over a century.
